This little creation of mine came about because I was never able to find the kind of salad that would satiate my leafy cravings. There are many salads out there that I love, but none have ever hit the spot as much as my own concoction.
I call it my Superfood Salad, as it seems to contain every color of the rainbow.
The best part is that it can be as healthy or unhealthy as you want it to be.
Granted, healthy should definitely not be used interchangeably with low calorie.
Many of the ingredients in this salad are high in protein, high in fiber, but not low in calorie. I tend to have this salad as a meal, and not as a side dish.
Be mindful of portions when deciding how much of each ingredient to use.
Below, you’ll find the portions that I tend to aim for:
Salad
½ bag of mixed greens (or lettuce of your choice)
2 small steamed organic red beets
¼ cup cannellini beans
¼ cup corn
1 tomato
2-3 tablespoons Gorgonzola cheese
Dressing
Pinch of salt
Pinch of pepper
¼ cup of balsamic vinegar
Drizzle of olive or avocado oil
On days when I really want to splurge I like to add in some chopped walnuts.
This salad is filling, inexpensive, and takes 5 minutes to prepare.
It’s perfect for those weeknights when you’re too tired to light up the stove, but still don’t want to have to rely on fast food or frozen meals.
